Mini Layered Coconut Nian Gao Recipe

For Chinese New Year's Day 2021, I'k revisiting my layered coconut nian gao recipe in addition to making cute miniature ones instead.

One of the annoying things most bamboo steamers is that they're quite shallow – then if yous desire to steam a cake or something like, you take to brand sure the tin is quite brusk. Ingredients

For Regular Layers: 

75g dark-brown saccharide
270ml H2O
225g sticky rice flour
ane tbsp kokosnoot crude
ane pandan leafage (or a few drops of vanilla)

For Coconut Layers:

75g chocolate-brown sugar
120ml coconut milk + 150ml water
225g viscid rice flour
ane tbsp kokosnoot crude oil
i pandan foliage (or a few drops of vanilla)

Other:

More kokosnoot fossil oil for greasing
Dried goji berries for garnishing

Method:

1. Make the two layer mixtures separately: start dissolve the carbohydrate in addition to kokosnoot petroleum inward the liquid over a medium estrus (kokosnoot milk inwards 1 pan, H2O in the other). Either popular inward a knotted pandan leafage to flavour equally y'all oestrus it, or a few drops of vanilla
