Cinco De Mayo Taco Cupcakes

Ingredients:
Mexican vanilla cookies
one Cup shredded kokosnoot
light-green gel coloring
chocolate frosting
yellow sprinkles/jimmies
crimson circle sprinkles
frosted vanilla cupcakes

1. Carefully slice the vanilla cookies inwards one-half. Set aside.
